
Preheat your air fryer to 190°C (375°F) or your oven to 200°C (400°F).
Pierce the sweet potatoes with a fork and place them in the air fryer or oven. Cook for 40-45 minutes in the air fryer or 50-60 minutes in the oven, turning or flipping halfway through.
While the sweet potatoes are cooking, heat a pan over medium heat and add the beef mince. Cook until browned, then add the chopped onion, garlic cloves, red pepper, and jalapenos. Cook until the vegetables are softened.
Stir in the taco seasoning and tomato paste, mixing well to combine. Add the spinach and cook until wilted.
Once the sweet potatoes are cooked, slice them open and fill each with the beef and vegetable mixture. Top with light mozzarella.
Return the filled sweet potatoes to the air fryer or oven for a few minutes until the cheese is melted and bubbly. Serve hot.
