
Drain and press the tofu to remove excess moisture. Cut into 1cm thick slices.
In a bowl, mix soy sauce, maple syrup, smoked paprika, and garlic powder. Marinate tofu slices in the mixture for at least 15 minutes.
Heat olive oil in a frying pan over medium heat. Fry the tofu slices for 3-4 minutes on each side until golden and crispy.
Halve the bagels and toast them until golden.
Mash the avocados in a bowl with lemon juice, salt, and black pepper until smooth.
Slice cherry tomatoes, cucumber, and red onion thinly.
Spread the avocado mixture on the toasted bagel halves. Top with rocket, sliced vegetables, and crispy tofu. Serve immediately.
