  • 1 1kg (2lb 4oz) pork ribs, cut into 8cm (3¼in) lengths
  • 1 groundnut oil for deep-frying
  • 1 2 garlic cloves, crushed
  • 1 1½ tbsp Chinese five spice
  • 1 2 spring onions (scallions), finely chopped
  • 1 3 tbsp sugar
  • 1 3 tbsp Chinese rice wine
  • 1 240ml (1 cup) chicken stock
  • 1 1½ tbsp light soy sauce
  • 1 1 tbsp grated orange zest
  • 1 120ml (½ cup) rice vinegar
  • 1 For the marinade:
  • 1 2 tbsp Chinese rice wine
  • 1 1 tbsp light soy sauce
  • 1 1½ tbsp dark soy sauce
  • 1 1 tbsp rice vinegar
  • 1 2 tsp sesame oil
  • 1 1 tbsp cornflour (cornstarch)
