Black Pepper Beef with Green Peppers and Onions

  • 1 2 tsp whole black peppercorns
  • 1 450g (1lb) beef fillet, sliced into bite-sized pieces
  • 1 2 tbsp oyster sauce
  • 1 1 tbsp Chinese rice wine
  • 1 2 tsp light soy sauce
  • 1 a splash of sesame oil
  • 1 2 tsp cornflour (cornstarch), plus 1 tbsp mixed with 2 tbsp water
  • 1 1 1/2 tbsp groundnut oil
  • 1 2 garlic cloves, thinly sliced
  • 1 1 small green (bell) pepper, de-seeded and diced
  • 1 1 small onion, diced
  • 1 120ml (1/2 cup) chicken or vegetable stock
