
Preheat your oven to 180°C (160°C fan) and begin by splitting the English muffins in half. Place them on a baking tray and set aside for toasting later.
In a mixing bowl, combine the sausage meat with freshly chopped coriander. Mix well until the herbs are evenly distributed throughout the meat.
Shape the sausage mixture into 4 equal-sized patties. Heat a non-stick frying pan over medium heat, add a drizzle of oil, and cook the patties for 4-5 minutes on each side until golden brown and cooked through.
While the patties are cooking, mash the avocado in a bowl with lemon juice and a pinch of salt. Set aside. Crack the eggs into the pan, using the sausage fat, and fry until the whites are set and yolks are still runny.
Toast the English muffins in the oven for about 5 minutes until golden and warm. Remove from the oven and place a slice of cheddar cheese on the bottom half of each muffin.
Assemble the muffins by spreading the mashed avocado over the cheese. Top with a sausage patty, then a fried egg. Place the muffin tops on and serve immediately.
