Peel and chop the butternut squash into bite-sized cubes. Finely chop the onion and red pepper. Grate the ginger and mince the garlic cloves.
Heat a tablespoon of oil in a large pot over medium heat. Add the onion, garlic, and ginger, and sauté for 5 minutes until the onion is translucent and fragrant.
Stir in the curry powder and cook for another 2 minutes to allow the spices to release their aroma. Add the red pepper and butternut squash, stirring well to coat them with the spices.
Pour in the coconut milk and vegetable stock, bringing the mixture to a gentle simmer. Cover and cook for 20 minutes, or until the butternut squash is tender.
Season the curry with salt and pepper to taste. Garnish with freshly chopped coriander before serving hot with rice or naan bread.
