Add the onion, beef brisket, salt, pepper, and bay leaves to the slow cooker. Cover with the beef stock.
Cook on high for 7 hours, or adjust the time based on your slow cooker's efficiency.
Remove the beef from the slow cooker and shred it.
Add the gravy granules to the stock in the slow cooker and stir until it reaches your desired thickness. Add more granules if you prefer a thicker gravy.
Return the shredded beef to the slow cooker, stir, and serve over creamy mashed potatoes.
