Preheat your oven to 400°F. Add the chicken thighs to a bowl, drizzle with olive oil, and season with salt, pepper, garlic powder, smoked paprika, thyme or oregano, cayenne pepper, and baking powder. Mix well and bake for 40 minutes.
In a food processor, combine Greek yogurt, mayo, scallions, cilantro, jalapeño, lime juice, chipotle powder, and salt. Blend until smooth, then taste and adjust seasoning as needed.
Prepare the salad by combining thinly sliced Persian cucumbers, finely diced red onion, chopped cilantro, olive oil, lemon juice, and a pinch of salt. Mix well, taste, and adjust seasoning.
Cook the lowcarb rice according to package instructions or use your preferred rice alternative.
To assemble, place a serving of rice at the base of a bowl, add a chicken thigh, two large spoonfuls of salad, avocado slices, and drizzle with the prepared sauce.
