Start by making a simple sauce. Heat olive oil in a pan and add smashed garlic cloves. Let them cook until fragrant.
Add pureed san marzano tomatoes to the pan and stir to incorporate the oil into the puree. Season with cracked black pepper to taste.
Prepare a breading station with eggs and crushed Tuscan crackers. Butterfly the chicken, pound it gently to flatten, and coat it in the egg and cracker mixture.
Heat olive oil in a pan and cook the breaded chicken until golden brown on both sides.
Place the cooked chicken in a baking dish, cover with the prepared sauce, and top with mozzarella cheese. Broil until the cheese is melted and bubbly.
