- 2 tbsp olive oil
- 1, roughly chopped red onion

- 100g/3½oz, cut into chunks chorizo
- 2-3 sprigs thyme
- 50g/1¾oz, stones removed black olives
- 8 cherry tomatoes

- 1 large, head removed, scaled and gutted sea bass
- small bunch fresh thyme
- 2 tbsp extra virgin olive oil
