- 50g/1¾oz, stones removed of black olives
- 8 of cherry tomatoes
- to taste of salt and freshly ground black pepper
- 1 large, head removed, scaled and gutted of sea bass
- small bunch of fresh thyme
- 2 tbsp of extra virgin olive oil
