Cape Malay Curried Beef

Aromatic Cape Malay Curried Beef with a touch of sweetness from dried apricots. Tender beef in a rich curry sauce served with rice or rotis.

  • 1 1 tablespoon neutral cooking oil
  • 1 800g stewing beef, diced and patted dry with kitchen paper
  • 1 2 onions, finely chopped
  • 1 5 cloves of garlic, crushed
  • 1 4cm piece of ginger, peeled and finely grated
  • 1 3 hot red chillies (deseeded or not, to taste), finely chopped
  • 1 1 red pepper, deseeded and diced
  • 1 2 tablespoons tomato purée
  • 1 700ml hot water, or more as needed
  • 1 1 tablespoon apple cider vinegar
  • 1 2 bay leaves
  • 1 3cm stick of cinnamon
  • 1 6 green cardamom pods
  • 1 2 sprigs thyme
  • 1 75g dried apricots, chopped
  • 1 salt and freshly ground black pepper
  • 1 fresh coriander, to garnish (optional)
  • 1 rotis or plain rice, to serve
